1Melt coconut oil in a small pan along with the ground cinnamon, nutmeg and monk fruit sweetener. Place all the nuts and seeds in a large tray and stir through the melted coconut mix.
2Toast in the oven at 160°C for 5-7 minutes. Remove, stir and return to the oven for another 3-5 minutes, until golden brown.
Make sure you remember to stir your granola well to ensure that ALL nuts are uniformly golden and crunchy.
The longevity of your granola will depend on how airtight your storage container is!
