Poached Eggs on Pea Pancakes

Pancakes
 175 g frozen peas
 25 g butter or coconut oil if dairyfree
 1.50 tbsp cornflour
 1 egg, separated
 1 pinch of Himalayan salt or herbal salt
 1 pinch of rosemary, oregano or sage to taste
Topping
 2 tbsp extra virgin olive oil
 3 eggs
 1.50 tbsp apple cider vinegar
 1 tsp organic pesto or mayonnaise

Cook the peas in boiling salted water for a few minutes, then drain in a colander. Brown the butter in a pan and remove from the heat.

Place the peas in a food processor with the cornflour, egg yolks and seasoning and process to make a puree.

Whisk the egg whites until stiff. Add to the peas in the processor and gently mix under.
